Serves 4-6


  • 1 baguette, sliced into 1/4" thick pieces
  • heavy drizzle of basil genovese olive oil
  • 4-6 ripe tomatoes, diced
  • 5 basil leaves, chiffonade cut
  • 2 garlic cloves, minced
  • 1/4 cup basil genovese olive oil
  • 2 tablespoons balsamic
  • 1/2 teaspoon sea salt
  • fresh ground pepper to taste

Recipe Preparation

  1. Preheat oven to 400°F.
  2. Line a baking sheet with bread slices and drizzle generously with basil olive oil. Bake until toasted, about 10 minutes.
  3. In a non-reactive bowl (glass or ceramic), combine tomatoes, fresh basil, garlic, 1/4 cup basil olive oil, and balsamic. Add salt & pepper to taste.
  4. Spoon tomato mixture on individual toasts, distributing evenly. Enjoy!
