Tomato Shrimp Scampi on Angel Hair

  • ¼ cup olive oil
  • 4 garlic cloves, chopped
  • 2 (14-ounce) cans Italian-style diced tomatoes, undrained
  • ½ cup vermouth or dry white wine
  • ½ teaspoon sugar
  • 2 tablespoons capers
  • 1 pound deveined peeled shrimp, rinsed and patted dry
  • 1/8 teaspoon red pepper flakes
  • 8 ounces angel hair pasta, cooked, drained and kept warm
  • ¼ cup chopped basil
  • ¼ cup (1 ounce) freshly grated Parmesan cheese

Recipe Preparation

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the garlic and sauté for 2 minutes.
  3. Stir in the tomatoes, vermouth, sugar and capers. Cook for 5 minutes, stirring occasionally.
  4. Stir in the shrimp and red pepper flakes and cook for 3 minutes or until the shrimp turn pink.
  5. Add the pasta, basil and cheese and toss to mix. Serve immediately in shallow bowls.
