Buttermilk Ricotta

Ingredients

  • 1 cup cream
  • 3 cups milk
  • 1 1/2 cups buttermilk
  • Cheesecloth

Recipe Preparation

  1. Bring milk and cream to a simmer with a pinch of salt. Slowly drizzle in the buttermilk until curds separate from the whey.
  2. Once the separation has occurred, strain through cheesecloth. Tie cheesecloth and hang in refrigerator over a container to catch all residual dairy.
  3. Let hang for two days
