  • 2 finely cut apples
  • 1/2 cup grated carrot
  • 1/4 cup butter (room temp)
  • 2 eggs
  • 2 teaspoons cinnamon
  • 2 teaspoons lemon extract
  • 1 3/4 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2/3 cup sugar (may substitute with brown sugar)

Quick Tip

Substitute brown sugar instead of white granulated sugar for a sweeter, richer taste.

Recipe Preparation

  1. Blend sugar, butter and eggs. Add the rest of the ingredients.
  2. Bake in well-greased and floured bread pan at 350 degrees for 45-50 minutes or until done.
