John Gilbertson

Chef John Noel Gilbertson earned a CAP de Cuisine Francaise-U.S. in 1983 and has been cooking professionally since 1978. He is recognized as a Certified Executive Chef by the American Culinary Federation (ACF) and the World Association of Cooks (WAC). In October 2007, Chef Gilbertson appeared as a guest chef on the MS River Explorer, Vantage Cruise Lines on the Danube River through Austria and Germany as a German cuisine expert. Since March 2007, Chef John has been leader of the culinary team at Sanford USD Medical Center in Sioux Falls, which prepares over 5,000 meals per day. Previous he was with Hotel Sofitel-Minneapolis; Hilton and Four Seasons Hotel Houston; Doubletree Hotel-Austin, Embassy Suites Little Rock; Sheraton-Sioux Falls and the Sioux Falls Convention Center. Chef John spends hundreds of hours annually developing professional cooks and chefs as well as teaching cooking and service skills to the public. He promotes sustainability in food circles as Executive Chef for HarvesTable, a seasonal dinner series featuring locally grown foods served in natural settings. He has won many honors and awards and cooked for celebrities such as Queen Elizabeth II, George W. and George H.W. Bush, Aerosmith, Jerry Seinfeld and others. When asked what he enjoys most about his work, Chef John said, “Initially it was the challenge of seeking perfection in food seven days a week. The latter part of my career has been sharing my love of food and service with anyone who will listen or eat, literally.”
